INGREDIENTS (2 People)

 100 gr of barley
vegetable broth: 1 carrot, 1 piece of cellery and half onion
tofu “hard”
breadcrumb
oil and salt

METHOD

Cook the barley in the vegetable broth for 30 minutes. The barley is taken out of the water and drained well. Take the hard tofu and cut it into small pieces and sautee. Mix the barley with the tofu. Afterwards form the mass into small balls, if it crumbles add breadcrumb. When the croquette is ready roll in other breadcrumbs mixed with oil and salt. Bake in the oven for 10 minutes at 180°C.
