Leeks with Potatoes
INGREDIENTS (2 Persons)
1 kilo leeks (Kentanes)
1 kilo potatoes sliced in thick pieces
1/2 kg ripe tomatoes sliced in pieces
200g dry white wine
1 Onion finely chopped
100gr Extra virgin Cretan olive oil
1 Lemon (juice)
1 tbsp flour
Peel, wash the leeks and cut into thick pieces. In a casserole sauté in olive oil over low heat for a few minutes, the onions and the leeks until are caramelized. Then add the potatoes, douse with wine and add the tomatoes, then also add 2 cups of warm water and let it simmer about 30-35 minutes. Before removing it from the heat, stir separately the flour, the lemon juice and a bit of broth and pour in the casserole, stirring gently.
