Maldivian vegetable curry

INGREDIENTS

Cauliflower
Broccoli
Carrots
Potatos
or any other vegetables of your choice
Chili powder
Curry powder
Turmeric
Coriander
Ginger powder
Tomato paste
Coconut milk
Onion, chopped
Garlic, chopped
Curry leaves(optional)
Olive oil or any other oil of your choice

METHOD

Heat oil in a pan, add onion and garlic as well as vegetables and let simmer for about 3 minutes at low temperatures. Add tomato paste and 2 cups of coconut milk and let simmer for another 8 minutes. Finally, season to taste with salt and pepper and serve with rice.
