Organic Quinoa and Witlof Salad wtih Lemon Vinaigrette, Citrus Fruits and Cucumber

INGREDIENTS

2 each Endive also known as Witlof Lettuce
50 gms Organic Quinoa

For Garnish
1 each Grapefruit
1each Orange
1 each Cucumber
2 pieces Baby Radish
½ punnet Micro herbs

Lemon vinaigrette
5gms castor sugar
1teaspoon Di jon mustard
20ml lemon Juice
50ml Good Extra Virgin Olive Oil

Maldon Flake Salt and Ground Black Pepper to Taste

METHOD

Quinoa:
Boil Water in a pot and add little salt to taste. Cook Quinoa in the liquid until it’s soft ( approx. 3-5 minutes). Once done, Strain the liquid and place the quinoa in a flat tray

Lemon Vinaigrette Preparation:
Take a stainless steel bowl, add the di jon mustard  and lemon juice in it. Now start whisking the mix by adding a little olive oil at a time, forming an emulsion. Season the dressing with salt and pepper and keep aside

Garnish:
Peel and segment fruits and thinly slice cucumber and Radish. Refresh the vegetables in ice water, so they are nice and crunchy

Serving:
Take the leaves off the endive lettuce and cut the end stem part. Marinade Quinoa and Lettuce leaves together and then season accordingly. Arrange the salad as per your liking, then garnish with sliced vegetables and Fruit segments

CHEF’S TIP:
You can also add any of your favorite best available seasonal vegetables or cereal as per your liking. For Seasoning, I would recommend Sea Salt Flakes which provide you with a better seasoning result.
