Raw Vegetable Salad
10gr. Green Spring Onion
10gr. Lemon Juice
25gr. Olive oil
10gr. Tamarind juice
1gr. Fresh White Pepper
First wash all the vegetables with water. Peal the carrots and clean the spring onion and bean sprouts. Slice the carrot, zucchini in 4cm long thin strips and mix it with the whole bean sprouts and small coriander leaves. Finish with fresh sliced spring onion.
For the sauce mix the lemon juice and Tamarind juice, whisk slowly the olive oil until you get a nice emulsion. Season with Salt and pepper
