INGREDIENTS

Puree
60gm baby potato0
5gm onion0
5gm cebollin
Salt and pepper
15ml white truffle oil

Cream
25gm squash
25gm chayote
20g broccoli
15ml olive oil
Salt and pepper
Parsley
5gm Vegetal margarine

Sauteed Vegetables
10gm portobelo mushroom
10gm ostra mushroom
10gm green beans
10gm yellow baby squash
10grs green baby squash
Watercress
Rocket
10gm Spinach
Flowers
5ml Balsamic vinegar

METHOD

Make a puree with the baby potato preciously boiled, fry onion and chives. Add the potatoes, mix them, add the white truffle oil and finally add salt and pepper
Cream: Put in a frying pan olive oil, wait to heat, add the squash, chayote, broccoli preciously boiled, add margarine, salt and pepper and put into a blender. The result is a soft cream.
Sauteed vegetables: Put the portobelo, ostra mushroom, green beans, baby squash in a frying pan, add margarine, add salt and pepper and reserve.
